Blackcurrant Ripple Ice Cream

Serves 8
200g blackcurrants
2 tbsp sugar
Juice of ½ lemon
230g double cream
450g ricotta
800g condensed milk
2 tsp vanilla bean paste
Pinch of Maldon Salt

1 Start by making the blackcurrant ripple. Put the blackcurrants, sugar and lemon juice in a small saucepan over a medium heat and allow to simmer for around 10 mins, or until it thickens and resembles jam. Tip the mixture into a bowl and place in the fridge to cool.
2 Meanwhile, to make the ice cream base, add the double cream to a large bowl and, using an electric or hand whisk, beat it until it forms stiff peaks. In a separate bowl, whisk together the ricotta, condensed milk and vanilla bean paste, along with a good pinch of Maldon Salt, then fold the double cream into the ricotta mix until smooth. Transfer to a freezer-safe container and place in the freezer.
3 After about 30 mins, remove the ice cream from the freezer and dollop some of the blackcurrant coulis across the top of it, then use a knife to ripple it through the ice cream. Return to the freezer and freeze overnight. Any leftover blackcurrant coulis can be drizzled over the ice cream just before serving. Cook’s note: If you don’t have fresh blackcurrants, frozen work just as well, although you may need to simmer the mixture for a little longer to thicken it. Try experimenting with other seasonal berries throughout the year, too.

Breathe deep

Whether it’s seeking a short respite in the Breathe Earth Collective dome, or fully immersing yourself in some of Austria’s stunning countryside, the process of switching off and reconnecting with nature through your senses helps to focus the mind, boost happiness and ease any worries. Anywhere with a high density of trees and plant-life can have a beneficial effect, as not only do they release oxygen into the air, but also biochemicals called phytoncides. These phytoncides are produced to help trees warn other trees against danger and to ward off harmful bacteria, however they also have an anti-microbial effect on our bodies when inhaled, helping to boost the immune system. Commonly known as forest bathing, research has shown that simply stopping and taking time to be amongst nature, removing technology, and absorbing the sights, sounds and smells of your surroundings will help to reduce high blood pressure and levels of anxiety, while mood and creativity all receive a welcome boost.

Plan a trip to stunning Austria and enjoy the health and wellbeing benefits of its therapeutic waters

Water – it’s nature’s therapy and has the ability to both calm and energise us. The sight, sound and smell of it has been found to reduce stress and anxiety levels, lower heart and breathing rates and to boost creativity and general happiness.

So, as the world starts to slowly open up again and the thought of foreign travel begins to excite us once more, what better destination to plan a future trip to than the breathtaking vistas of Austria, famed for its rich mix of lakes, thermal springs and waterfalls – nature’s own therapy rooms.

Feel the warmth

With more than 40 thermal spas located throughout the country, much research has been carried out into the benefits of these naturally warm waters. Found to contain minerals and trace elements such as brine, sulphur, calcium, magnesium, iodine or selenium, thermal baths can only be recognised as such if they have their own spring and the water is at least 20°C (68°F).

“The thermal effect can be seen when we look at muscle relaxation,” says biologist Johanna Freidl, who has researched the benefits of different types of thermal water, adding that, “warmth enhances blood flow and relaxes the entire system.” She also discovered that the different types of water found benefited the body in different ways – sulphureous water strengthened the immune system, as did slightly radioactive water containing trace amounts of radon, while brine baths were found to have a strong calming and relaxing effect.

Make a splash

However, if you thrive on the freedom of wild swimming, then head to one of Austria’s stunning lakes. Some are refreshingly cool, such as Lake Achensee, originally created from melted glacial waters. Research has found that braving a chilly dip can reduce anxiety, stress and depression, while boosting alertness and endorphins. Meanwhile, many of Austria’s lakes are gloriously warm during the summer months – including Lake Millstätter See, which reaches temperatures of around 27°C – making them the ideal location to swim or splash about in amidst some of Europe’s most spectacular scenery.

Fall in love

And if you’re just not ready to fully submerge, then why not plan a trip to take in the health benefits provided by one of the country’s many waterfalls. “It’s in our blood to feel good when we’re in nature,” claims Johanna Freidl. “Life started out in nature, which is why we need it to relax and recharge – and to live healthy lives.”

Known as Inhalation Aerosol Therapy, waterfalls create microscopic droplets with a negative charge that stay in the air for longer than those with a positive charge. Inhaling these particles has been found

to stimulate our immune systems and to cleanse our airways, while alleviating, or even eliminating, symptoms of allergies and asthma. “The particles are 200 times smaller than an asthma inhaler’s droplets and can penetrate the airways that much more deeply,” confirms Freidl, making the impressive Krimml Waterfalls in SalzburgerLand – the country’s most well known and highest waterfall, at 380 metres – a must-see on your bucket list.

So, whether you prefer to spend your time getting active and making a splash or simply soaking in the warm thermal waters, Austria has the ideal destination for you.

How to make the most of Austria’s lakes

Lakes Ottenstein, Dobra and Thurnberg Three man-made lakes popular for hiking, cycling and bathing. Kayaks, rowing, pedal or electric boats can also be rented for the ultimate view.

Lake Neusiedler With its shallow waters and lakeside beaches, this steppe lake is a great place to meet friends and family and to enjoy some of the best birdwatching in Europe.

However, you chose to enjoy forest bathing, the benefits are clear with studies linking it to reduced levels of the stress hormone cortisol, anxiety and high blood pressure, while mood and creativity are boosted.

“Humans still operate on the same software as in the Stone Age,” says wood expert and former forester Edwin Thoma. “And that’s why spending time in nature is so refreshing. The biochemicals trees exchange are a true elixir for us humans.”

Its anti-inflammatory properties mean lavender oil is often called upon in formulations for acne and other skin conditions such as eczema and psoriasis. Lemon

Hair and skincare experts JASON share their hair care tips for the colder months

Whilst we often think about how the colder weather affects our skin and change products accordingly, can you say the same about your hair?  Hair can also be affected by the winter weather, we just don’t feel it like we do our skin. Read on to discover more.

Firstly, the low humidity in the cooler months can dry our hair out. The dryness in the air raises the cuticle, zapping out moisture and leaving hair looking and feeling dry, as well as brittle and prone to breakage. Extreme environmental elements can also contribute to this: moving between the cold outdoors into centrally heated homes and offices dries hair out and can lead to the dreaded frizz. To minimise these extremes, it is best to don an extra layer and only resort to turning the heating on if you really have to. Using a humidifier can help keep moisture in the air (as well as your hair!).

What we eat plays an important part in our hair health too. As the temperature drops our diet may not always be as complete and balanced as in the summer months. Winter finds us craving carbs, stodge and comfort food over healthy salads and fruits. This can leave our hair looking dull and feeling lacklustre. For great hair, ensure you are eating a protein-rich diet. Biotin has been identified as an important ingredient for hair growth, and can be found in a variety of foods but only a few contain particularly rich sources of it, including raw egg yolk, liver & leafy green vegetables such as Swiss chard.

Other external factors which may affect your hair health include:

Pollution, which damages our hair the same way it does our skin. If you live in the city, you might want to consider wearing a hat or scarf to protect hair from exposure.

Over-use of products, which over time can build up, causing dullness and adding dead-weight to hair. When looking for products, look for natural and organic types formulated with botanicals and  free from harsh chemicals that may strip your hair’s natural oils. If you are a daily hair washer, try to reduce the frequency of washes, start by going to every other day and see where you end up. The fact is, many of us wash our hair too frequently and this upsets the balance.

Over-styling, which can cause dryness and frizz. In the winter months particularly, try to limit use of heated styling devices and go for more natural looks - curls created with plaits and pins, natural waves and more up-dos.

Most of us love to be out in the sunshine, but we’ll most likely be making the most of our gardens this year. However, overexposure to UV rays can permanently damage our skin. We all know we should be wearing sunscreen, but knowing what to look for in a product and how to use it effectively can be confusing. To help, we’ve put together this guide to choosing sunscreen to keep you and your family safe this summer.

Firstly, always look for a broad spectrum product with a high SPF, which offers both UVA and UVB protection, such as those from Jason. Be sure to apply 20 minutes before going out in the sun, and ideally stay out of the sun between 11am and 4pm.

A study has shown that on average we only apply 25-50% of the amount of sunscreen we are supposed to in one application. We should apply at least 30 ml of sunscreen with every all-over body application: the equivalent of a shot glass full. Be sure to re-apply at least every two hours, even more frequently if you are hitting the (paddling) pool, although most sunscreens these days offer some kind of water resistance.
